
Okay one promise I will make to you is that there will never be any boring salads around here! This is the type of salad I could eat every single day and never get sick of it. It has tons of flavor and texture variety and is packed with a wide range of color and nutrients. It’s super versatile so you can swap out the toppings for whatever is in season or it’s a great way to clear out your fridge at the end of the week.
Ingredient breakdown:
LEAFY GREENS: I love a mix of romaine and arugula, but anything goes here! Throw in your favorite leafy greens as the base and then load it with toppings.
AVOCADO: let’s be honest…I rarely make a salad without avocado! Having a healthy fat in your salad is going to not only help you absorb the nutrients but it will keep you satiated for longer!
SOFT BOILED EGGS: An easy and affordable protein packed addition to any salad. I love preparing a big batch to use throughout the week.
BACON: Who doesn’t love bacon!? I love baking mine in the oven and then chopping into bits for a flavor-packed crunch!
COLORFUL VEGGIES: This is the fun part, you can add any veggies you have on hand. I added cucumber, radish and tomatoes, bell pepper would work great too. Don’t like something? Leave it out or swap for something else. The beautiful thing about a salad is you get to completely customize it for YOU!
ROASTED SWEET POTATO: Ditch the croutons and make roasted sweet potato cubes! Throw them in the oven with some avocado oil, salt and pepper. Prep these ahead of time and toss them on your salad for a hit of complex carbohydrates.
FRESH HERBS: Herbs are such a fun way to add flavor and nutrient density to your salads. Dill goes amazing on this one but cilantro, parsley, mint or basil would be fabulous too! (Better yet, throw them all in there!)
OPTIONAL BOOST: Nuts & Seeds are a great way to add texture and extra fat. Pumpkin seeds and pistachios are my favorite for this salad.
DRESSING: Primal Kitchen Ranch is my go-to for this one!
